Does Firefox add-on offline mode send text or any type of data or usage information to languagetool.org? If it does, is there another way to use the firefox add-on completely offline without sending any data or text to languagetool.org.

There is no “offline mode” in that sense. You can specify a server which runs locally, then no texts will be sent to the Internet.
