Now, I haven’t found a way to link the iOS app/mobile Safari extension to a self-hosted instance. Am I overlooking anything or is this not possible?

Well, your suggestion points to nowhere, Daniel. There seems to be no article in the Help knowledge base.
I’ve found no official doc or UI hint that the iOS keyboard can be configured with a custom API endpoint, and the community here or on Reddit is rather vague… as in “no idea”.
This thread is an example by itself — it’s been 6 months, no answer, no nothing.
